I don’t know about you, but I’ve always been a little nervous about grilling chicken. I know, people do it every day.  But, between trying not to dry out chicken breast, and figuring out how to evenly cook chicken pieces that have an uneven thickness, I’ve just shied away from it.  Until now!  First of all, it is way to hot to turn on my oven these days so dinner is coming from the grill!  Secondly, it really is simple to just toss together some herbs and spices for a flavorful rub before firing up the grill. I can’t believe I didn’t do this sooner!

This Easy Grilled Chicken Drumsticks recipe really is simple!  I cook mine on a gas grill but, I am sure, you can adapt the recipe for a charcoal grill if you prefer.  I love how the fat just drips away, leaving perfectly tender chicken and a nice crisp skin.  If there is one thing I cannot stand, it is soggy chicken skin!  But that is never a problem if you grill them.  These grilled chicken drumsticks are so tender and flavorful that they are even good cold the next day.  (I never thought I would be advocating for cold chicken drumsticks but they really are good!)  You can pack them to bring to work or on a picnic and not have to worry about lunch.  Double duty meals are great!

Ingredients
  • 4 pounds chicken drumsticks
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon dried rosemary
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper
Instructions
  • In a small bowl, combine salt, basil, rosemary, garlic powder and pepper
  • Rub over all sides of chicken drumsticks and set aside at room temperature while grill preheats
  • Preheat grill to medium high heat
  • Oil grill and place drumsticks, skin side up on grill
  • Cover and cook 25 - 30 minutes until they reach an internal temperature of 180 - 185°, turn drumsticks every 6 or 7 minutes and move away from any hot spots so they do not char.
  • Once drumsticks are fully cooked, remove to a platter and allow to rest for 10 minutes before serving
